Greek Yogurt Chicken Salad
2 large boneless, skinless chicken breasts, cooked and cooled
1/3 cup low or non-fat plain Greek yogurt
1/2 cup halved seedless grapes
1/2 cup diced celery
1/2 cup diced apples
1/3 cup halved almonds
Salt and ground black pepper (optional)
Chop or shred chicken and place in a large sized bowl. Add grapes, apple, celery, almonds, and yogurt to bowl and mix well.
Add salt and pepper to your tastes and mix again. Enjoy immediately or store the salad in a tightly sealed container in the
refrigerator for 3-5 days.
